Lemon Squares

Here is the first post of my week of lemon recipes.  A favorite of many, my family absolutely loves Lemon Squares!  I hope you enjoy them as well. Yum!!

Lemon Squares

Preheat your oven to 350 °.


7 tbsp unsalted butter, at room temperature

1 c + 2 tbsp all-purpose flour

1/4 c + 1 tbsp confectioners’ sugar

2 eggs

1 c granulated sugar

grated zest of 1 small lemon (only the rind, no pith)

2 tbsp fresh lemon juice

1/2 tsp baking powder

pinch of salt

Place the butter in an 8″ square cake pan.  Place the pan in the oven until the butter melts, about 5 minutes.  Let it cool.  Sprinkle in the 1c flour and the 1/4 c confectioners’ sugar.  Mix the ingredients to form a dough.  Press the dough evenly over the bottom of the pan.  Place back into the oven and cook the crust for 15 minutes.

In another bowl, combine the eggs and granulated sugar.  Mix with an electric mixer on medium speed until the mixture is well blended.  Reduce the speed to low and beat in the remaining 2 tbsp of flour, the lemon zest and juice, the baking powder, and the salt until well combined.

Pour the lemon mixture over the hot crust.  Return to the oven and bake until pale brown, 20-25 minutes.  Transfer the pan to a wire rack and let it cool.

When the cookies have cooled completely, dust the 1 tbsp confectioners’ sugar over the top.  Cut into squares.  Makes approximately 16 squares.
